CONFETTI CHEESE BISCUITS
Makes 6 servings
1 tablespoon vegetable oil
2 tablespoons finely chopped onion
2 tablespoons finely chopped green pepper
1 cup Bernard Sugar Free Biscuit Mix
1/4 cup shredded fat free or low fat cheddar cheese
3 tablespoons water
Preheat oven to 450°F. Heat oil in small saucepan. Add onion and green pepper; cook over medium-low heat 10 minutes or until vegetables are soft. Combine biscuit mix and cheese in medium bowl; add water and cooked vegetables, stirring just until combined. Knead dough 10 to 12 times on lightly floured surface. Roll or pat dough to ½-inch thickness. Cut out biscuits with a 2-inch biscuit cutter; place on ungreased baking sheet. Bake 8 to 10 minutes or until lightly browned.
